What happens when you hire a viticulturist from Penfolds and give him a sheep farm? He hires an ex-accountant studying wine and sets about planting vineyards destined for making some of the world’s best Pinot Noir (seriously, they’ve won an award) in less than 2 decades. Named after the unique limestone soils, a mix of fossils, seashells and small pebbles that have been fused together through the seismic movement of North Canterbury, Greystone has made big waves in the wine world under the stewardship of viticulturist & GM, Nick Gill and winemaker, Dom Maxwell.

THE GOOD THINGS THEY DO
Already certified organic, they’re working toward being totally regenerative and carbon neutral. Beyond that, Dom is exploring being extra low-intervention – to the extent that he’s even doing away with needing cellar space for some of his ferments, despite his wife suggesting maybe possums could be a problem… He’s pioneering a whole new type of winemaking, where wines ferment in the vineyard block where the grapes grow, which means all the yeasts are just from that particular vineyard and the wine continues to be exposed to the weather variations of the vintage.
OUR FAVE THING ABOUT THIS WINE
As we’ve learned, Dom is pretty big on not interfering with his wines – which means loads of attention to detail, but very little else. This unfiltered, unfined ginger-laced gem is not only delicious, but it’s also vegan-friendly!
