Minimus Wines was the experimental playground of winemaker Chad Stock, where boundaries were meant to be pushed and convention politely ignored. From obscure grape mutations to wild fermentation techniques, Chad used Minimus to explore the outer edges of what wine could be—often with thrilling, unpredictable results. It was through this project, which is no longer in production, that we first met Chad, whose creative energy now fuels his new venture, Limited Addition, alongside his wife, Bree.
