Paulus Wine Co. is the story of Paul and Pauline - two winemakers from opposite ends of the world who found common ground in South Africa’s Swartland. Paul grew up in Cape Town, studied winemaking in Stellenbosch, and spent time in Burgundy and the Rhône before returning home to work as assistant winemaker for Eben Sadie, one of South Africa’s most respected names. Pauline, originally from Southern France, trained in Montpellier and made wine in Chile, New Zealand, and Australia before settling in South Africa, drawn by its raw beauty and untapped potential. Together, they craft soulful Chenin Blancs that speak fluently in both terroir and philosophy. Their wines, Bosberaad and Bartàs, are more than just delicious - they’re thoughtful chronicles of place, people, and the winding paths that connect them.

Their winemaking is hands-off but deeply thoughtful—native ferments, old barrels, and no additives beyond a touch of sulfur. Bosberaad and Bartàs are both 100% Chenin Blanc, but each tells a different story: one a quiet meditation on place, the other a bold conversation about region.
